How to automatically select a subject

Use Select > Subject to tell Photoshop to automatically select the main subject on a layer.

How to replace the background around a selected subject

Then add a layer mask. The layer mask automatically hides the area that was not selected—the background around the subject. With the original background hidden, the layers below become visible and appear as a new background for the subject.
