The Knife tool lets you cut shapes into multiple shapes with closed paths.

An image is cut into two pieces using the knife tool

Select the Knife tool.
Drag through shapes to cut them into multiple shapes with closed paths, or press and hold Alt (Windows) or Option (macOS) as you drag to cut in a straight line.
