When the status update breaks for retroactive status updates, the bulk update Agreement button is used, as explained in the following article: https://helpx.adobe.com/sign/kb/Agreement_status_not_updated_in_Salesforce0.html

No, the bulk update button does not update the Signed document. It just updates the Status and the events.
